Best Chocolate Chip Cookies - Vegan

I know I know, it's really hard to claim that cookies are healthy...and I'm not. But made with coconut oil is a move in the right direction, right?

Ok, all rationalizations aside, these are amazingly delicious cookies! And yes, they are vegan, so your friends who eat cruelty free can indulge as well!

By the way, the school lunch kids got these and no one was the wiser, nor were there any complaints. Rather it was, "may I have another, please!?"

Best Chocolate Chip Cookies (from Minimalist Baker)
(makes 16-20)

1/2 cup coconut oil, made liquid
1 cup brown sugar
1/4 cup non-dairy milk
1 tablespoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips

Preheat oven to 350 degrees. Beat the coconut oil and brown sugar together, and add in the almond milk and vanilla. It will look more liquidy than usual cookie dough; it's ok.

In a separate bowl, whisk the flour, baking soda, baking powder and salt. Combine with the wet ingredients and using a rubber spatula to blend in the dry mixture and add in the chocolate chips. It will look very crumbly, but again, this is as should be. Roll into balls and flatten on a baking sheet. Bake for 7-8 minutes until done. Don't over bake them! You will burn the bottoms. Let them sit for a minute or two at least to cool down on the outside, coconut oil is HOT!
